AHA features WV brewery beer recipes

Did you ever want to find out what ingredients actually go into one of your favorite beers. Every year or so, the American Homebrewers Association (AHA) updates its files with a selection of beer recipes for popular brews from around the nation.
In its Craft Beer Clone Beer Recipes section, the AHA website currently features beer recipes from two WV breweries: Big Timber Brewing and Weathered Ground Brewery. Big Timber Porter is listed under the 2019 tab; Weathered Ground’s R.K. Double IPA is under the 2017 tab. All the recipes are sized in popular homebrewing quantities.

Some timeless, some changing
Big Timber Porter is one of West Virginia’s more timeless classics. The beer entered the market in 2014 when the brewery first opened and has remained virtually unchanged. The beer was immediately popular with craft beer fans. Today, it is still among the best-selling beers in the state and is available in both draft and 16 oz. cans.
But you also know that in the brewery world, things change. Brewers often tweak a recipe trying to make incremental improvements or respond to changes in ingredient availabilities. In this case, Weathered Ground brewer Sam Fonda tells us that he has changed his R.K recipe from the the one listed in the AHA website. The 2017 recipe was actually from a batch brewed before the brewery opened. As he brewed future batches, Fonda made adjustments that give the beer a more unique profile and a better fit among his extensive list of Weathered Ground IPAs.
For the homebrewers out there, here is Sam Fonda’s 2019 R.K. IPA recipe.
R.K. Double IPA (2019)
10 gallon batch of RK Double IPA. 8.5% abv. 13-15 SRM
Grist
Standard 2 row malt – 70%
Munich light malt – 15%
CaraMunich II malt – 8%
Flaked Oats- 7%
Chocolate malt or dark malt (400+ lovibond) -0.5%….I just like to add for a little color at vorlauf. The final color of the beer should be slightly red or amber.
Hops
1.5 oz Citra @ 30 min left (20 IBUs)
2 oz Citra/2 oz Amarillo addition @ WP
2 oz Citra/2 oz Jarrylo addition @ 10 min in WP
2 oz Mosaic @ 15 min in WP
Dry Hop
1 oz Citra
2 oz Amarillo
3 oz Jarrylo
1 oz Mosaic
Yeast
Dry English Ale
Start at 65 degrees and gradually let rise to 69/70…dry hop while barely still fermenting.
